About Us

Gallop is an American café located in the heart of Denver's beautiful Highland neighborhood. We began here in one of Denver's truly great neighborhoods in 2004, and fashioned our cafe to be an idyllic European-style Coffee-Bar-Cafe' serving breakfast, brunch, and lunch with great desserts, pastries, coffee and cocktails.  Our name is inspired by the former street name "Gallup St.", which is now "Zuni St."   We are an "American Cafe" in the sense that our loacation sits in the heart of one of Denver's most historically diverse and culturally rich old neoghborhoods.  Our menu also reflects the continued relevence of that diversity, with nods to many flavors and the inspiration of cusines and influences from around the world. The intersection where our building sits was a major crossroads of early Denver, which was a bustling young city. Denver's name was earlier coined the Queen City of the west, and with the great influx of new denizens interested in the Gold and Silver being uncovered in our beautiful Rocky Mountains, she inspired awe and the greatest speculations of a new life.

We are located the historic Weir Building, which was built in 1885, and 1906 in two parts, one before the turn of the century and the second phase of the building soon afterward, which is where Gallop is now located.  It was a marvel in its day, one of the biggest new buildings in a Denver neighborhood, built to serve the the burgeoning Highland neighborhood and urban-most Denver with a combination of retail shops and apartments.  Denver was going through great changes then.  Her numerous small villages; Highland, along with Globeville, Elyria, Swansia, Auraria were merging around the same time Weir's last stage of construction reached completion.  Our neighborhood village Highland, incorporated with the other villages and became the greater city we now know as Denver.

The landmark Weir Building also housed Weir Hall, and was a place for the community of Highland to gather for social clubs, parties, other special get-togethers and receptions.  The Weir also served as an important destination for neighborhood commerce and had deep roots in the heart of our community with a bank, livery stable, bakery, general mercantile (where Gallop is now located), and other shops, and apartments (which are now condominiums).  They each served our neighborhood well along the way of time, for over 100 years in various modes of service to benefit our growing ever changing community.   We hope Gallop recaptures a warm and inviting atmosphere; an American café and fast casual restaurant, recalling special elements of that time gone by. We strive to be a vibrant a place where friends and neighbors come to meet, enjoy one another and enjoy great food and drinks.

Owners, Glen Baker and David Grafke, have more than 60 years of combined experience in the food service industry. They have taken great pride in creating a bright and comfortable old-world atmosphere with an extensive menu of specialty coffees, freshly baked pastries, brunch specialties, hot and cold sandwiches, and freshly made soups and remarkable salads - made fresh from scratch daily and made fresh to order.

A New Addition:  We currently offer a new line of delicious all Organic Health Shakes - made from a wide variety of organic fruits, vegetables and a cosiderable array of other super-food micro ingredients which may be added to any of the basic selections.  Watch for Facebook specials for a coupon in the near future!
