About Gallop Cafe

Gallop is an American café located in the heart of Denver's beautiful Highland neighborhood. We began here in one of Denver's truly great neighborhoods in 2004, and fashioned our cafe to be an idyllic European-style Coffee-Bar-Cafe' serving breakfast, brunch, and lunch with great coffee, healthy shakes, organic smoothies and unique cocktails, desserts, pastries.  Our name is inspired by the former street name "Gallup St.", which is now "Zuni St."

We are an "American Cafe" in the sense that our loacation sits in the heart of one of Denver's most historically diverse and culturally rich, old working neighborhoods.  We make every effort to promote that sensibility of old and new.  Old - while new!  Our menu reflects a continuation of that diversity too, nodding to bold culturally rich flavors and the inspiration of numuerous cuisines from around the world; some, the traditional and of by-gone-times, and some of flavors and foods completely bold, fresh and new.  We hope hope you find something to enjoy in those fresh twists between time and tradition.

Even 100 years ago, the intersection where WEIR building sits was a major crossroads of early Denver, which was a bustling young city. As people brought their rich traditions with them, it is fitting that Denver's name was coined the Queen City of the west.  The great influx of new denizens interested in the gold and silver being uncovered in our beautiful Rocky Mountains, inspired awe and  greatest speculations about what it meant to live in the west.  The prospect of this bold new life was the very groundwork being laid for Denver becomming a culture of cultures and at the same time a true cultural crossroads. The same fresh attitudes and ideals carry through today as Denver, and beutiful Colorado build on the best of the past. The best is yet to come!

Gallop is located the historic Weir Building, which was built in 1885, and 1906 - in two parts - one before the turn of the century and the second phase, building soon afterward, which is where Gallop is now located.  Ours is a true millenial.  It was a marvel in its day, one of the biggest new buildings in a Denver neighborhood, built to serve the the burgeoning Highland neighborhood and urban-most Denver with a combination of retail shops and apartments.  Denver was going through great changes then.  With numerous small villages; Highland, along with Globeville, Elyria, Swansia, Auraria, were merging around the same time Weir's last stage of construction reached completion.  Our neighborhood village, Highland, incorporated with the other villages and became the greater city we now know as Denver.

The landmark Weir Building also housed Weir Hall, and was a place for the community of Highland to gather for social clubs, parties, other special get-togethers and receptions.  The Weir also served as an important destination for neighborhood commerce and had deep roots in the heart of our community with a bank, livery stable, bakery, and the general mercantile and pharmacy called Garvin's, where Gallop is now located.  The apartments above are now condominiums.  Each served our neighborhood well along the way of time, for over 100 years in various modes of service benefitting and helping grow our ever changing community.   We hope Gallop recaptures a warm and inviting atmosphshere, with elements of that time gone by while embracing the efficiency and verve of an authentic American style fast casual restaurant.  We strive to be a vibrant a place where friends and neighbors come to meet, enjoy one another and enjoy great innovative comfort food and drinks.

Owners, Glen Baker and David Grafke, have more than 60 years of combined experience in the food service industry and take tremendous pride in creating a contemporary concept inside a bright and comfortable old-world atmosphere.  An extensive menu of specialty coffee and tea favorites, micro-nutrient healthy shakes, specialty lattes and unique refreshing beverages and cocktails, along with brunch specialties, hot and cold sandwiches, freshly made soups, remarkable salads, desserts and freshly baked pastries - made fresh from scratch daily and made fresh to order. Everything on our menu is also available TO-GO

In Addition:  Our a new all organic Health Shakes, Smoothies and Specialty Lattes - are far from run-of-the-mill.  They are made from a wide variety of organic fruits, organic vegetables and an array of micro-nutrient and super-foods which may be added to any of our basic selection - They make a great energetic lift - made from raw, clean - whole foods! ...either to jump start the day or to amp up the midday - any day - everyday!
